Hi there! I'm Elmo, and I'm thrilled to meet you.
Before this little shop on Murray Street, I spent nearly two decades in some of Vancouver's finest pastry kitchens — as Pastry Chef at Thomas Haas Chocolates & Patisserie, Assistant Pastry Chef at Blue Water Cafe, and time at Vancouver Community College as an instructor and a stint at the Four Seasons Hotel.

I loved that world. But I kept dreaming about what those years of technique could become if I brought them home — to my own neighbourhood, baking the things I love for the people next door.

Elmo Baking Co. is that dream, baked fresh every morning.
Classic Craft. Remarkable Flavours.
Everything we make starts with honed French technique — croissants laminated by hand with premium butter to make up to 33 layers, choux baked into delicate shells to be filled with cream, entremets built layer by careful layer. The classics are the heart of what we do, and we take them seriously: an almond croissant should be worth crossing town for.

And then, because pastry should be fun, we play. We're guided by the seasons and by everything that inspires us — sometimes that's a perfect BC summer berry, sometimes it's a flavour from my Filipino childhood, like the ube halaya folded into our signature twice-baked croissant. You'll always find the favourites you know, next to something you've never seen before.

The way we figure it, no one should waste life on unmemorable pastry. So whether you're a purist or an adventurer — if you're going to have one, make it remarkable.

Whether you're celebrating a milestone, saying "I'm thinking of you," or just giving your Wednesday a highlight — we want to be the little bit of remarkable in your everyday.
Our Journey
My wife Patty and I started small — baking out of a friend's restaurant in Richmond, selling at Saturday pop-ups, and supplying cafes around Vancouver and New Westminster. Our croissants earned a following one weekend at a time. But we live in Port Moody, and we love it here — the parks, the breweries, the community. After years of searching for the right space close to home, we opened our doors on Murray Street in the winter of 2022. It's been quite the journey, and we're just getting started.

You'll find us at 3133 Murray Street, just down the road from Rocky Point Park and along Brewers Row — so come prepared to enjoy more treats than one! We're a take-out shop with a bit of window seating and a few chairs out front; the park across the street offers the best patio in town, with a view of the inlet to match. Free garage parking is available in our building (entrance via Electronic Avenue).
